Shining a light on often overlooked British ingredients, the menus here are carefully curated and capricious. They have featured the likes of grouse with elderberry purée, clapshot (mashed potato and swede), bread sauce and green juniper, and hot smoked Wiltshire trout with almond milk, prune kernel and caviar.
The beautiful high-ceilinged dining room is the perfect spot to take your tastebuds on an adventure – aside from extraordinary ingredients and techniques, there are also wine pairings from artisanal growers.
